Does Labor Day signal the end of summer? I’m not sure. I do know that peaches are fading in Arizona. It’s probably a good idea to freeze enough peaches to get through the winter. There’s nothing like defrosting a bit of summer sunshine in the middle of January or making a pitcher of peach margaritas! Must plan ahead!
For now the peaches are at their peak – firm enough to chop into a salad and ripe enough to be sweet and juicy perfection. Which is why this week my go-to side was this sweet Peach Cucumber Salad. It’s sturdy enough to keep for a few days in the fridge, is full of hydrating fruit + veggies and is versatile enough to serve alongside any meal of the day.
Last weekend I popped over to the farmer’s market and a vendor was offering samples – chunks of cucumber and peaches. I grabbed a piece of both, made a little sandwich and decided they belonged together, along with a little cilantro and red pepper.
You could easily take these ingredients – maybe add a ball of mozzarella – then skewer them for a quick appetizer. Four ingredients + summer does all the flavor work.

- 2 cups Persian cucumber, diced
- 1 red pepper, diced (about 1 cup)
- 2 peaches (about 2 cups)
- ¼ cup chopped cilantro or parsley (more to taste)
- Prep all the ingredients.
- In a large bowl, combine cucumbers and red pepper.
- Gently add peach chunks and cilantro.
